WATERMELON HONEY HEALTH POPS


I’m going to skip the whole recipe story that no one cares about or wants to read + get right to it.

These are extremely easy to make + rich in nutrients and health benefits! Only 4 simple ingredients.

Watermelon

Honey

Lime

Sea Salt.

If you don’t feel like making popsicles, you can just enjoy it as juice. I actually double this recipe— freeze half into popsicles + refrigerate half in a mason jar as juice !

WATERMELON

a hydrating fruit with vitamin A & C. Rich in antioxidants!!— which help cell damage and overall cellular function, like preventing/fighting disease

  • Vitamin A is great for your skin, vitamin C supports your immunity.

  • The potassium in watermelon is good for heart health, especially blood pressure and blood flow

  • Lycopene and citrulline (antioxidants) reduce inflammation in your body

LIME

  • even more vitamin C and antioxidants 🍋‍🟩

  • Really helps with digestion due to the acidity— breaks down your food

  • Key antioxidants like flavonoids and limonoids protect your cells against free radicals & have anti cancer properties.

- could write a book on benefits, keeping it short. Honey is amazing. just eat it daily and we’ll talk about it later

RECIPE

For recipes like this, I always say measure with your heart because you can’t go wrong. You really can’t mess this one up… Before you pour this into the molds, just take a taste + adjust the ingredients to your liking. I.E. add more honey for more sweetness or extra lime for a more tart popsicle.

Makes about 12 pops depending on your molds.

4 clean ingredients

  • About 4 cups of chopped watermelon

  • 2 pinches of sea salt

  • Juice of 2 limes AND “scoop” out some pulp

  • 2 tablespoons of honey (or to your liking— can’t go wrong with the honey here)

STEPS

  1. Juice your limes and use a fork to add some of the fruit pulp. This will make the popsicles more tart + fresh tasting. Best done when the limes are room temp— not cold, so the honey blends well.

  2. Add your lime juice, honey, and watermelon to a blender. Add 2 pinches of salt.

  3. LIGHTLY blend. About 30 seconds. If you blend too long, it will be too watery and start to foam.

  4. Taste the juice. Adjust to your liking.

  5. Pour into popsicle molds. I use BPA free silicone molds— I’ll link below. Leave 1/2 an inch from the top as they will expand

  6. Freeze for 4+ hours, best if let them sit over night

  7. For best removal- Flip molds upside down & give gentle push on the top of the popsicle as you pull on the stick— to keep everything together

  8. Enjoy!
